5 ingredient shrimp glaze
Ingredients:
Juice of half a lemon
5 garlic cloves, minced
3 T chopped parsley
¼ C honey
1 T chipotle in adobo puree, more if you want it extra spicy
Pinch of salt and pepper
Combine everything together in a bowl and marinade shrimp for 20 minutes. Use this recipe as a marinade for all types of seafood, my favorite being shrimp.
Cooking methods:
If you are sautéing shrimp or fish: Use a tablespoon of oil to brown the shrimp on both sides. When you add the shrimp to the pan try to let the excess marinade drip off before adding to the oil. When the shrimp is pink remove from the pan.
You can make a pan sauce by: adding white wine (about ¼ cup) and 2 tablespoon butter. Allow to reduce, add the shrimp back in and cook one minute.
If you are cooking shrimp on the grill: Coat the shrimp in the glaze and sit for 20 minutes. Cook on a hot grill for 4 minutes per side.
Serve with rice, as a topping on a salad or whatever strikes your fancy! Below are mine, I topped them with mango and ate as an appetizer :)
